Chopped Vegetables of your choice. (Aurbergine, Courgette, Pepper etc) 1 Medium chopped tomato JUMJO Rai Vegetable mix Salt Oil

1. In a pot, on a low heat, add 2 tablespoons of oil, when the oil is hot, add the JUMJO Rai vegetable mix and tomato, stir for 30 secs.
2. Increase heat and add all vegetables and salt, stir for 5 mins.
3. Cover the pot and reduce to a low heat. Cook for approx 20 (30)* minutes, until the vegetables are soft stirring occasionally.
4. Serve with piadina /rice & yogurt or as a side dish with you favourite cut of meat.
5. JUMJO!!!


To bulk up this dish, why not add potatoes!!! Simply chop and boil the potatoes and add to the cooked vegetables 5 minutes before the end.
